About us
Established in 2019 by husband and wife, Deke and Claire, the Tarbay Botanist is a family run craft gin distillery based in the countryside of Windsor.
With a hospitality background, Deke is the botanist and is passionate about gin flavours, balancing botanicals and creating great tasting gin. With Claire by his side and a corporate background, she looks after sales and marketing and is also chief taster – which she does happily!
The Tarbay Botanist was created to provide a local gin to local people and is currently Windsor’s only gin distillery.
The first gin developed was The Windsor Batch which is made all year round. It is our version of a classic London dry gin and has flavours of Lemon Balm, Lavender and Rosemary. In 2020 The Windsor Batch was awarded a bronze award by The International Wine and Spirits Competition (IWSC)
The Tarbay Botanist also creates seasonal varieties of gin throughout the year using botanicals that are home grown or locally sourced where possible. We believe that all our different batches are flavour balanced gins rather than just gin with added flavour.
The Country Garden is a summer gin with flavours of quince, elderflower and lemon and The Fireside is a winter festive gin with flavours of tangerine, cinnamon and spice.

Sloe and lime gin – limited edition.
Infused with sloe and lime zest this is a great winter gin. At 40% it is a strong gin and can be mixed with tonic or in a cocktail. 50cl bottle.
Our stills
The Claire
At the heart of our distillery is our wonderful still called The Claire. She is a 60 litre alembic copper still with additional column to increase the abv. She is heated by fire and used to make our Windsor Batch gin.
Rafferty
Rafferty is our 5 litre rotary evaporator that distills gin in a vacuum. We set the vacuum to start evaporation at 50 degrees. At such a low temperature the flavours of the botanicals are more refined as they don’t get scorched by heat. We will be using this still to produce our exclusive batches however a lot more testing and trialing needs to be done first!
Windsor
The windsor still is our 25 litre T500 with alembic copper dome. We use it for producing smaller batches like our Fireside batch the Country garden batch.
Eton
Eton is our small copper alembic still that we use for flavour combinations testing. The most it will distil is enough for 2 bottles but can achieve this in just over an hour.
Bespoke Gin
What is bespoke gin?
Here at The Tarbay Botanist HQ we provide a complete service for anyone wanting to create their own gin brand but without the knowledge and cost of a distillery. Ideal for pubs or retailers and we can offer a minimum amount of 1 batch of 30 bottles!
Option 1 – For the more serious resellers of branded bespoke gin
Step 1 – Regulation
Before starting the wonderful journey of creating a new gin we need to make sure that the supplier (you) are fully licensed so we can complete our due dilligence checks.
You will need to have an AWRS license before we can supply you with any alcoholic beverages. Also if you are bottling the gin then you will need to register for duty paid stamps (these are the pink stamps on every bottle of spirit above 30% and 300ml)

Step 2 – Flavour profile
Once compliant you will now get to the good bit – tasting! We will make a range of flavours depending on what you want the gin to taste like and then sit down and work out the perfect balance of botanicals ready for batch distilling.
Step 3 – The hand over
Having worked out the flavour of your gin you will now be ready for the hand over. We do offer a bottling service for a small cost (all bottles will need to be labeled before we fill them) or can deliver in 5 litre containers. Both options are delivered at your required ABV.
What we do not do
At the distillery we always have a lot going on so there are some areas that this option will not provide a service for:
We do not create your design.
We do not print or attach your labels to your bottles.
We do not market your gin
We will not sell your gin
We will not copy your flavour profile
Option 2 – The quicker and easier way to get a bespoke gin
Step 1 – Consultation
First of all we will need to know exactly what you want you gin for. Whether its for selling in a pub, shop or for a school fundraiser. This can be done on the phone or in person so we can get an idea of the direction your bespoke gin will be headed.
Step 2 – Flavour profile
This is the exciting part where we work together to make an exciting flavoured gin for you. It may well be that you would like a specific botanical in your gin or just happy for us to work on a recipe for you, either way the bespoke gin will need to be tasted and checked before starting the batch which we can do at your premises or we can post to you.
Step 3 – Design
Now that the gin is ready you’ll need to choose a bottle size and shape as well as design a label. This will be done through our designer and once happy with the look it will be sent to our printers ready for attaching.
Step 4 – Delivery
Once we have the finished labels we will attach them to your chosen bottles and box up the batch, then deliver it to you. Simple!
