Inspired by the Internationally acclaimed Scottish fiddle tune “The Gael” Signature Scottish gin is five times distilled from malted barley using a blend of traditional botanicals and a hint of Scottish heather. The result, a gin with a light citrus nose, following through with juniper, cardamom and a warm finish.

Distinctly Scottish Notes
Our Inspiration ‘The Gael’ is a Scottish fiddle tune which was originally written by Dougie MacLean as a commission for The Loch Ness Visitor Centre. It subsequently featured in the soundtrack for the movie The Last Of The Mohicans and is played by pipe bands and fiddlers the world over. It carries a special part in all our lives and it seemed the natural musical choice to incorporate in our gin.
For our signature gin our aim was ‘Scottish’. Using Malted Barley we distil in a bespoke hybrid still (copper pot linked to copper column) five times to achieve a high quality base spirit. Our botanicals including Scottish Heather are added to the base spirit by a combination of compounding and macerating and they blend to give the unique smoothness, flavour and notes. The result is a smooth gin with a citrus/heather aroma followed by a subtle juniper/slightly spicy flavour and a warm finish.

The Gael Signature Scottish Gin is distilled five times from malted barley, producing a pure and premium quality spirit, to which we add a blend of traditional botanicals with a hint of Scottish heather.
Authenticity comes from being created, distilled and produced in Scotland with a compelling back story, inspired by the internationally acclaimed and iconic Scottish fiddle tune, The Gael, which written by Scottish singer-songwriter and composer Dougie MacLean. Originally commissioned for the opening of The Loch Ness Visitor Centre it subsequently featured in the soundtrack for the movie The Last of the Mohicans.
The score makes an eye-catching backdrop for our bottle. Tasting – the gin has a light citrus nose, but has a full creamy mouth feel, following through with juniper, cardamom and a warm finish. SIGNATURE COCKTAILS

- 12 basil leaves
- 60ml The Gael Gin
- 5ml fresh lemon juice
- 10ml simple syrup
- 20ml Dry vermouth
Muddle basil and gin, add all other ingredients and shake with ice. Double strain over cubed ice. Garnish with a basil sprig.
The Calluna

- 50ml The Gael gin
- 10ml Elderflower Liqueur
- 20ml fresh lemon juice
- 15ml Heather honey syrup
- 5 drops of Lejay cassis bitters
- 1 fresh egg white
Shake first 5 ingredients with ice. Remove ice, add egg white and shake hard. Strain into chilled coupe glass, garnish with lemon twist or heather sprig.

- 60ml The Gael Gin
- 10ml Maple syrup
- 2 dashes of angostura bitters
- 2 dashes of orange bitters
Stir all ingredients with ice, strain onto large ice cube and garnish with orange twist and dark chocolate.

- 60ml The Gael gin
- 60ml Cider
- 20ml honey syrup
- 2 dashes of angostura bitters
Add all ingredients to a small pan and heat until it just starts to boil. Pour into a mug or wine glass and garnish with a cinnamon stick.
