Our Story
As a professional diver, St. Giles’ founder, Simon Melton, has been fortunate to venture to lots of unusual places around the world, giving him ample opportunities to explore a wide variety of delicious gins. On his exciting journeys, he invested years of research and visited many distilleries, all in passionate pursuit of his beloved spirit.
Internationally inspired. Perfected locally.
Returning home to Norfolk, the land of big skies and wide coastlines, gave Simon the perfect setting for quiet contemplation and dreaming of his next adventure; producing and perfecting a recipe for his own exceptional gin.
And now, with the help of head distiller Pete Margree and a beautiful custom-made copper still named Anna, that dream has finally been realised.
Our modern, elegant gin with its global flavour
St. Giles is an area in London that was synonymous with gin shops in the 18th century and it also happens to be a historic road in the fine city of Norwich, where Simon and his family have their own 18th century shop.
This exceptional gin is hand-crafted using a delicate blend of exotic botanicals. We simply want St. Giles, our modern, elegant gin with its global flavour, to be the byword for quality and taste.
Signature St. Giles Gin

The 11 carefully selected botanicals – which include rose petals, lemon grass and grains of paradise – are infused in our bespoke copper still by Head Distiller Pete Margree to create this modern and sophisticated signature gin.

Well rounded and smooth in the mouth, with the soft fruitiness of ripe berries, and underlying mellow spices.

As well as boasting a higher ABV than our original spirit, St. Giles Divers’ Edition is created using a distinctive blend of 10 carefully selected botanicals, including Norfolk samphire, cubeb berries, sea kelp and liquorice root.

St. Giles Raspberry, Rhubarb & Ginger Gin

Our Raspberry, Rhubarb and Ginger gin is created using fresh, local fruit and utilises a unique production process. Combining distillation of rhubarb and an infusion of raspberries, gives this beautifully refreshing gin an intense depth of fruity flavour.
NOSE
Raspberry aromas burst from the bottle.
PALATE
Refreshing and smooth raspberry sweetness to the fore. Underlying well-rounded rhubarb fruitiness gives depth and longevity to the tongue.
FINISH
Lasting fruitiness with a subtle hint of ginger.

Beautifully balanced, our Limited Edition seasonal gin combines fresh orange and cranberry flavours with a warming spiced finish. Enjoy over ice with a premium tonic or gently warmed with cranberry juice and a wheel of fresh orange.

A tour of the distillery, a guided gin-making session using a copper pot mini still, naming, bottling and labelling your own 50cl bottle of gin to take away and a tasting session of St. Giles gins. (over 18s only – min 2 persons, max 4 persons)

We are absolutely delighted to be opening up the distillery for our St. Giles Gin Experiences once more.
With a maximum of only 4 people per class we are offering a truly intimate and in-depth gin experience, where you will not only be privy to the magic behind our doors, but will also have the chance to create your own.
Choose from a range of botanicals, your favourites, the classics, or create an all-out experiment in a mini copper pot still. You will then be able to name, bottle and label your very own 50cl bottle of gin to take home with you. Discover our full range of gin through a guided tasting session, before finishing up with a gin and tonic of your choice – and if that wasn’t enough to tickle your taste buds, we are offering a 20% discount on any bottle of St. Giles Gin purchased on the day. Perfect for a gift with a personal touch, or as a well-deserved treat for yourself, the whole experience comes down to £75.00 per person.
