The Secret Garden Distillery showcases the magic of nature and the unique flavours found here. The Secret Garden itself is home to a wide range of hand-harvested botanicals which have been used in and inspired the flavours of our gins. Our Garden is the heart of our distillery. Founded on a derelict plot in 2012, the garden was transformed into a secret oasis, providing an escape from city life.

Our two copper stills – Violet and May produce our liquid and we then dilute to 39% ABV as we feel this is best for the botanical flavours to harmonise with the gin.The Secret Garden gins are lovingly crafted to reflect our passion.

What makes a Gin Organic?

If a gin is made with 100% natural ingredients, and is free of any synthetic chemicals, then it’s considered organic! Of course, this makes organic gin a healthier option, as well as being a much more environmentally friendly choice of drink. Secret Garden Lavender Gin

This is a new formulation of our purple Lavender & Echinacea Gin – a crystal-clear spirit imbued with the delicate aroma and taste of lavender in our new 70cl bespoke bottle

Nose: Soft lavender, woody pine needles
Taste: Floral and reminiscent of peach sweet tea
Finish: Dry, warming and soothing 

Dried lavender is added to the still with the botanicals that create our base gin. The distillate has these soft lavender overtones in a crystal-clear liquid which is perfect at 40% ABV.

The original recipe used distilled waters made of lavender and echinacea blended with our base gin. Petals to provide colour were then added. The petals that provide the colour are rich in natural anthocynanins. These are responsible for the blue, violet and red pigments we see in the natural world.

When you added a tonic or any other fizzy soda to the original gin it changed the pH and so the anthocyanin changes from purple to pink! However after feedback from our customers about the colour fading over time we took the opportunity with the launch of our new bottle to develop a new recipe without colour and we are very pleased with the result. At 40% ABV we feel we get the perfect balance of flavour and aroma and a better mouthfeel.

Our Summer Gins are part of the Secret Garden Distillery’s Seasonal range, designed to capture the essence of the season, exploring flavours, scents and seasonal plants. 2023’s formulation was so popular celebrating all things summer that we have commissioned artwork for our new 70cl bottle to launch the Summer gin.

We were inspired by all the blossom in our Garden and Glasshouse  This beautiful gin is a London Dry and reflects the merging of our Scottish and Australian heritage under our new owners. The alchemy of blossom combined with tropical fruits, lemons and limes inspired by our Aussie home infused with our base gin has been the inspiration for this new luxury gin. Described as an explosion of flavour and aromas this is ready-made magic for a refreshing gin and tonic this summer. Perfect for the gin-lover in your life.

At 40% ABV we feel we get the perfect balance of flavour and aroma and a better mouthfeel. And remember there are no added sugars, artificial colourings, flavourings or additives….just nature distilled.

Our perfect serve for this is a light tonic with a slice of lime.

From a derelict plot outside Edinburgh in 2012 a green oasis has been created that allows us to enjoy the subtle magic that nature has to offer and provides us with the inspiration to create magical gins from “seed to sip”. 

The Garden is 100% natural: no fertilisers or chemicals. Our planting is lovingly cared for by the team of gardeners and plants selected for the flavour profiles or colour they bring to our gin. For example, we have a large garden of Apothecary Rose, a rose that has been used since antiquity, which helps to flavour and colour its namesake gin.

Nature is at the heart of everything we do, from the way we grow our plants and hand harvest our botanicals to the way our gins are packaged. For us, being ‘sustainable’ isn’t just using less plastic and recycling where possible, although that is important, it really means working hand in hand with nature, a relationship that should be based on give and take. It is all about balance, and the collective outcome of that balance is sustainability.

As a Distillery Garden we specialise in our gin botanicals and flowers that we use for colouring our gins as well as native wild plants, all of which benefit nature. Our range of gins, honey and herbal teas follow the same ethos and are a celebration of all things wild.

In 2023, we received LACER funding from Midlothian Council to help us connect our onsite borehole to the rest of the site providing us with a sustainable source of water for the Garden and for the Distillery helping to reduce our carbon-footprint. We are always looking to improve our carbon-footprint and we are not perfect yet but we strive every day to be better. We are working with Climate Springboard and RBS to help us develop our Carbon Planner so we can measure how the changes we are making drive down our carbon footprint. Our short-term aim is to be Carbon-zero before 2025 but our longer-term goal is to be Carbon Negative by 2030.

To this end we have created an entire business that revolves around the health of the earth because although we are a distillery, café, and shop, most importantly we are a Garden, one that is truly rooted in nature.

Secret Garden Gin Heavenly Peace / Completely natural without chemicals

Our garden is completely natural, we use no chemicals, pesticides, or herbicides. It is created in a way so that it is sustainable as well as self-sufficient, this is also known as permaculture.

Our plants are hand-harvested, there is no machinery in the process, helping to reduce our carbon footprint. When soil is ploughed, it breaks up and releases the trapped carbon, therefore we limit digging in our gardens, which means, not only are we keeping the trapped carbon in the soil, but we are also actually capturing more.

We only use organic compost to ensure no chemicals touch our soil. In the garden, we limit our plastic consumption to only using recyclable plastic pots and offering discounts when these are returned. We have planted trees and juniper as hedging and allow wild corridors between the cultivated areas of the garden to encourage wildlife, carbon capture and soil health.

Since the start of our journey in 2012, we have always had bees at the Garden and our 6 hives produce fragrant and pesticide-free honey which we use in some of our gins and sell some in our Shop.

Most importantly though, we garden specifically for our bees well-being. We keep wild corridors in our garden, where the grass isn’t obsessively cut and ‘weeds’ can prosper and grow.

We embrace these wild botanicals (weeds), such as the dandelion, not only for its beautiful sunny face that floods our lawns in Spring, but most importantly because it’s an early and critical source of pollen that is a life saver for the bees. We even use these wild plants in some of our gins and our Wild Gin celebrates this heritage.

Our labels are made with 30% grass and 70% virgin pulp. This material is manufactured without the use of any chemicals, so compared to normal labels, ours require 97% less energy and 99% less water to be produced. This results in CO2 savings of around 20%.

We use viscose shrink bands to seal our bottles because they are biodegradable. All our shipping materials only consist of paper which is completely recyclable.

sSecret Garden Gin Heavenly Peace / Always tasting the Quality

Our gins all have the same botanic ingredients in their base: juniper berries, of course; coriander seeds to give an earthy, aromatic even slightly sweet quality; winter savory leaf which gives a herbal, peppery note; and Angelica root which acts as a binding agent for other botanicals which gives each gin it’s own unique aroma and flavour profile. Together: a seed; a leaf; a berry; and a root provide the perfect canvas for every gin we produce. Gins that are truly rooted in nature.

The gin-making process begins with putting ethanol into our still and then adding juniper berries into the liquid. Our other base botanicals: dried winter savory leaves and crushed coriander seeds and Angelica Root are added to a muslin bag suspended inside the still and vapour-infused to produce our base gin. Depending on the recipe, most of the additional botanicals are added at this stage too. Our garden contains a wonderous variety of plants allowing us to experiment with new flavours and colours. It can take a few tweaks to get a recipe right; once it’s locked down to our satisfaction, distillation can properly begin.

The spirit comes out at around 79% abv and is slowly diluted to the required strength using water and constant agitation. In the case of our Secret Garden Apothecary Rose Gin, we add dried rose petals to the base to infuse with colour and a subtle flavour, then separately distil the petals and add them to the mix as distilled waters for additional flavour. A London Dry style such as our Wild gin has nothing added after distillation; all botanicals are in the still from the beginning.

Once distillation and the infusion are complete, our panel of tasters will check for colour, aroma and flavour. Once the gin has been approved, it is transferred to the production team in the warehouse for bottling, labelling and shipping.
