Why purchase a private cask from Retribution Distilling?

We are a distillery that is doing things differently and everything we do is centred around flavour creation and quality. Our production methods have all been developed in-house through trial and error with extensive research and education as the foundation.

We are one of a very few distilleries in England using direct-fired stills and probably the only distillery in England using a direct-fired still that we have designed ourselves. We could even be using the biggest direct-fired wash still in use in England.

Direct-fired copper pot stills are, in our opinion, essential to flavour creation. It’s the caramelisation and mallard reactions that result from the interaction of flame, copper and wash that are key. We are a new world whisky distillery embracing the old ways, and for a very good reason – flavour.

We use high quality locally grown grain, which is floor malted at Warminster Maltings, located only 12 miles away from the distillery (the oldest floor maltsters in the UK). Once the malt arrives at the distillery it is mashed, fermented, double pot distilled, cask aged and bottled all at the same location in Somerset.

We open ferment for between 7-14 days, the wash is then first distilled (stripped) in our 1800L direct-fired wash still, then distilled a second time in our 400L direct-fired copper alembic spirit still.

We are maturing our spirit in a variety of cask types and sizes and we are more than happy to offer our private cask buyers the same range of casks, subject to availability.

All the processes that go into making our spirit are hands-on leading to a product that is shaped by the people making it and the environment that it is created in, giving it a real sense of place that is rooted in the Somerset countryside. A true “spirit of the place”.

What does all this mean? We are producing high quality spirit, and its being noticed by the wider whisky community. The most recent example being featured in the Master of Malt blog post – ‘Five Whisky Distilleries we’re excited about for 2023’.

Juniper takes the helm in this gin. A ridiculous amount is used – firstly the juniper is steeped for 16 hours in high abv spirit, more juniper is added to the boiler prior to the start of the distillation run along with 9 other botanicals, and then the still’s vapour basket is packed with as much juniper as it will hold.

Each distillation run produces approx. 35 x 70cl bottles. Two runs are then combined and matured for four weeks before bottling which produces 70 bottles of gin per batch release.

The gin has been designed to deliver big on flavour and aroma – it literally shouts juniper from the bottle.

Great in a cocktail or a classic G&T.

When chilled or diluted this gin may appear cloudy, this is due to the dissolved botanical oils coming out of solution. Technically this is known as louching. This is a good thing as it shows just how many botanicals and how much flavour has been packed into each bottle.

A navy strength expression of Retribution Gin. It’s big, bold and oily – packed to the gunnels with juniper.

The gin comes in at 58% abv and is produced by blending an all juniper distillate with Retribution Gin. The all juniper distillate, is in effect watered down with Retribution Gin to a bottling strength of 58% abv.

When chilled or diluted this gin will appear cloudy, this is due to the dissolved botanical oils coming out of solution. Technically this is known as louching. This is a good thing as it shows just how many botanicals and how much flavour has been packed into each bottle.

Summer-Time Gin

We have used Retribution Gin as the base gin. We then added a large amount of strawberries to the still to steep over night before adding mint the following morning and distill as normal. This has resulted in a gin with a intense strawberry aroma with an underlying juniper note.

We use our Just Juniper as the base gin and then produce a lemon peel extract in the distillery and add it into the base gin.

Expect a big hit of lemon, citrus and juniper. Perfect for a refreshing G&T in the sunshine.
