Elfdock is said to have sprung from the spots where Helen of Troy’s tears landed on the ground. When Helen was done crying, her tear-herb grew across Europe, which we’ve found to be the perfect warming, stimulating catalyst for Polarity’s earthy undertones.
CADE
We’ve cranked gin’s ‘regular blue juniper’ up a notch with red prickly juniper, also known as cade.
This brings the spice to the party, infusing our gin with those woody, smoky notes that will make you sound impressive when you talk about being able to taste them.
Sweet
IRONWORT
This fluffy, lemony sweet flower grows on rugged, rocky cliffs and was used by Ancient Greeks to heal iron weapons wounds. It’s known affectionately as ‘Shepherd’s Tea’ due to it often being picked and brewed by shepherds tending to their sheep. Cute.
CHAMOMILE
Gentle and soothing, yet fierce with anti-inflammatory powers, chamomile brings a delicious apple sweetness to our gin. In ancient Egypt, chamomile was used both to worship the sun god and to decorate the King’s sandals,
so consider each sip as a drop of the truly divine – whether you’re in fancy sandals or not.

Harvested before their shells take shape, these zesty tannic gems gifted ink-black stains on the hands of the barefoot virgins who picked them on the summer solstice. Left to ripen until winter (the walnuts, not the virgins), the fruits of the summer labour were traditionally enjoyed as nutty, dark liqueur during deepest winter.
SAFFRON
