LOUTH DISTILLERY

Here at Louth Distillery, we are the proud home of renowned Lincolnshire brands Pin Gin and Rum Cat.

Expanding on the heritage of Bottomley Distillers, we want to welcome you into our world of botanicals, distillation and alchemy.

Pin Gin was born of the first distillery in Lincolnshire in 2016 and quickly became one of Lincolnshire’s most recognisable brands.

Now in its new home, Louth Distillery, we are open for experience bookings and gift shop walk-ins!

MEET THE TEAM

DOTTY

Dotty, our 35ltr copper pot, was the first ever still that made all of the Pin Gin in the first 6 months from the distillery!

In Dotty’s retirement, she can now be found in the new Louth Distillery Shop (not for sale, of course!)

So named, due to the dotted effect that comes with this type of copper alembic still, but also after Amy’s Grandma, Dorothy!

ROSE

Rose, our 100ltr copper pot, was the second alembic still to join our team.

She thankfully made Dotty’s tenure short and meant that we could introduce the first level of automations, that have led to the full automated distillery system we have now!

Rose, was given her name to share with the middle name of Molly.

STANSFIELD

Stansfield, our 500ltr copper pot, joined the team in 2019. Stansfield arrived, along with a brand new mash tun and fermenter, meaning that we were able to begin distilling whisky too!

Stansfield, named after Alan’s father is still in main production today and supports us with our small batch distillations and will be soon leading our new Lincolnshire Whisky project!

MOLLY

Molly, you might have guessed, is the new kid on the block and is a whopping 5,000ltr copper pot still.

She is being commissioned in Spring 2023 and will be able to produce up to 52,000 bottles of gin EVERY DAY!

Molly stands around 4m tall and is nearly as tall as two giraffes on top of one another!

Appearance:

Crystal Clear.

Aroma:

A wonderful intense hit of juniper, with citrus and floral lavender.

Taste:

Peppery juniper with zesty citrus and coriander. Intense lavender with a hint Turkish delight.

Aftertaste:

Herbaceous citrus and juniper. Overall: Bold and intense Pin Gin London Dry base in both flavour and strength, well rounded and delicious.

Appearance:

Lemon yellow.

Aroma:

Fresh burst of lemon and lime zest, clean and crisp with underlying pine and aromatics.

Taste:

Lightly peppered lemon & fresh lime zest with floral notes of sweet rose.

Aftertaste:

After the citrus, you get a herbaceous, flora finish that stays with you.

Overall: Bold citrus, with touches of juniper bringing character. Lemon notes are authentic and crisp.

Appearance:

Pastel orange.

Aroma:

Freshly squeezed zesty orange with underlying juniper.

Taste:

Sweetness to start, followed by fresh orange peel, piney juniper and a refreshing hint of lime kibble.

Aftertaste:

Full and lasting fresh orange with a hint of bitter pith.

Overall:

The result is a perfect balance of the uniquely bittersweet taste of Valencian oranges balanced with the complexity of our London Dry Gin.

Appearance:

Rose pink.

Aroma:

Stewed strawberries and rhubarb with underlying aromas of juniper and spice.

Taste:

Sweet strawberries balanced wonderfully with the bitterness of rhubarb, underlying pine with the acidity of the citrus balancing the sweetness from the fruit.

Aftertaste:

Fruity, sweet but bitter and herbaceous right at the end.

Overall: A wonderfully balanced pink gin, a taste of summer.

Crystal Clear.

Aroma:

Fresh lemon and lime zest with aromatic lavender and juniper. Delicate earthy notes.

Taste:

Piney juniper with vibrant and zesty lime. Slightly bitter orris root with floral rose. Luxurious mouth feel and overall a complex and dry gin.

Aftertaste: Citrus continues through with a peppery finish.

Overall: A traditional London Dry gin, packed full of juniper and citrus.

Join us at Louth Distillery, for our Tour & Taste experience, where you’ll be greeted with a London Dry Gin & Tonic at the bar.

During your experience you’ll be guided through samples of our range of spirits, from Pin Gin to Rum Cat. Our Tour & Taste experience will teach you a little about the history of the brand, the history of gin and how our processes work.
