We set out to create the very definition of what a London Dry Gin should be; to do something very simple, but do it to perfection.

Lind & Lime Gin is forged from the talent, heritage and industry of Edinburgh and its historic distilling district of Leith. In everything that we produce, our watchword is ‘balance’.

We create our classic robust London dry gin using 7 botanicals, juniper, coriander, angelica, liquorice, orris, fresh lime peel and aromatic pink peppercorns.

Three key flavours:

Juniper
Juniper is the cornerstone of any true gin. It’s what makes gin gin. It evokes forest like imagery – fresh pine, juicy berries and earthy aromas.

Lime
Citrus is our signature top note not fruit pastel, confected lime, but zesty refreshing lime. We spend countless hours peeling our organic limes by hand leaving behind the pith and juice which we then use for cocktails on our tour.

Pink Peppercorns
Lime and juniper alone are not enough to create complexity in a balanced gin. We chose pink peppercorns because they have a little bit of everything, they have orange like citrus, warming spice and bursting with red fruits.

This is given 16 hours to macerate allowing the dry botanicals to rehydrate and imbue the spirit with flavour.

The following morning we load a large vapour basket with a couple of kilos of fresh organic lime peel. We heat the mixture of spirit and botanicals using 100% green electricity and over the course of 9 hours the rising vapour infused with the botanic

We heat the mixture of spirit and botanicals using 100% green electricity and over the course of 9 hours the rising vapour infused with the botanicals from the pot passes through the lime peel giving it a beautiful citrus top note.

We condense the vapour back into spirit, capturing all of the flavour and aroma of fruit, pine and citrus.

After at least two weeks resting our gin is bottled in-house and hand-labelled with our plastic free-tamper seals that secures our natural cork in our entirely plastic free pack.

We’ve been to a lot of tours at a lot of distilleries. When it came to creating our own tour, we decided to put all of our favourite things into the single best experience that we could create.

PLEASE NOTE:

  • We operate the Challenge 25 policy, so please be prepared to show ID. This is an industrial environment and we are unable to accommodate babies on the tour.
  • The tour is conducted in English and we do not have translations available.

At Lind & Lime we only have three rules, no fire, no nuts, and please party responsibly. 



G&T
We like to mix Lind & Lime with 1 part gin to 2 parts tonic. Perhaps start there, and then add more tonic if you’d like it a little weaker.

Most of us don’t have the perfect ingredients to hand when we’re mixing a G&T at home, and we want you to enjoy our gin any way that you’d like to. But if you want a few more pointers…

We like to use a tall glass or hi-ball. It helps keep the fizz in your tonic for longer and it’s easier to measure out your gin to tonic when you’re pouring.

We’ve found that Fever Tree Refreshing Light Tonic works beautifully with Lind & Lime.
Fill your glass with ice – as much as you can. You want the ice to chill and refresh your G&T without diluting it.


The French 75

A decadent mix of champagne, gin, lemon juice and sugar syrup, the famous French 75 dates back to the First World War, created in 1915 at Harry’s New York Bar in Paris.

The cocktail was said to pack such a punch that it was reminiscent of being shelled by French 75mm field gun. 50ml Lind & Lime30ml freshly squeezed lemon15ml sugar syrupShake and pour into a champagne flute.

Once settled, pour champagne or prosecco down a bar spoon allowing it to sit on top of the gin mix. Optional: drop a sugar cube into the glass. Serve with a lemon twist



The Gimlet

In the Raymond Chandler novel The Long Goodbye, a character famously describes a Gimlet as ‘half gin, half Rose’s Lime Juice and nothing else’.

Indeed, that is how the recipe is originally set down in the famous Savoy Cocktail book of 1930. We were pretty excited about this as Rose’s Lime Cordial was first produced in Leith, where we make our gin.

However, after much experimentation we decided that to make the ultimate Gimlet, it’s got to be fresh lime juice. Maybe it just wasn’t as easy to come by in 1930… 50ml Lind & Lime25ml freshly squeezed lime juiceStir in sugar syrup or sugar and sweeten to your taste.

Shake with ice and serve in a coupe.
