OUR ORIGINS
Holyrood was created with the intent of proving that there is a different way of producing and to launch a different type of whisky brand. We proactively explore new recipes using heritage malts, speciality malts and different yeasts in our production process. These heritage and speciality malts and yeasts are the same raw materials that are used in producing different beers, and which give beer such a broad variety of flavours.

A NEW APPROACH TO TRADITION
In our distiller’s lab hangs a big, yellow, neon sign with four words: Test, Learn, Improve, Repeat. This is our whisky mindset, and it underpins all of our liquid thinking at Holyrood. It is an iterative approach that pushes us to explore, learn and continue to create liquid that excites and inspires. Whether it be gin, rum, or whisky, our whisky mindset lays the foundations for everything that we make.

Holyrood Distillery is situated in the city’s Southside district – under the shadow of the magnificent Salisbury Crags, and a short walk from the historic old town. Taking inspiration from our surroundings, and from Edinburgh’s brewing and distilling heritage, we produce the city’s only single malt whisky and an award-winning range of gin.

HEIGHT OF ARROWS FUNK Gin
It’s a common practice to ferment juniper in the Balkans for the purpose of making a lemonade substitute. This lovely refreshing Smreka inspired us to use fermented juniper to create Funk. Made by naturally fermenting juniper in a mixture of sea salt and lemons.

A balanced presentation of clean fresh pine & resin coupled with light citrus zest.

Initially oily and mouth coating with juicy and rich orange zest and lemon pith then a bold emergence of black pepper and cardamom, tempered with tapered herbaceous smoothness.

HEIGHT OF ARROWS HEAVY Gin
When we create whisky we often use malts that have been toasted. Toasting changes their characteristics and therefore the flavour that they impart on our spirit.
This led us to explore how we could apply this thinking to create a new expression of Height of Arrows. In the same way as using toasted malt, roasting spices has long been known to extract more complex flavour.
So in our Heavy recipe we have roasted the juniper, extracting more flavour to build a gin with big and robust flavour. A small addition of sugar after distillation brings balance, and a subtle sweetness.

HEIGHT OF ARROWS BRIGHT Gin
Our Bright expression is multi-shot, a gin distilling technique that concentrates botanical flavour. To create Bright we use over three times the amount of juniper we use in our first expression of Height of Arrows. The resulting spirit is then diluted with water to open up the flavours. The result is a gin that is big and bright and bursting with complex flavour.

This is an introductory tour – perfect for those who have not been to a distillery before, or want to know about both our gin and whisky production.
WHAT IS INCLUDED ON THIS TOUR?
A welcome cocktail, a sample of gin, and a sample of whisky are included with your ticket.
ARE THERE ANY TRANSLATIONS FOR THIS TOUR?
This tour is conducted in English only. We do not provide translations, or have audio guides. If you book a private tour experience, you are welcome to bring your own translator – however this is not possible on the public tour.
CAN CHILDREN JOIN THIS TOUR?
This tour is suitable for under 18s, with a child rate available for children aged 5-17 (under 5s go free and do not require a ticket). Under 18s will receive a soft drink on arrival to enjoy throughout the tour. Please note that all of our other experiences are strictly for those aged 18+ only.
