We are a family run business based at Penn Street Distillery in Buckinghamshire, deep in the Chiltern Hills. It started as a challenge between two brothers. Could we create a gin from start to finish that would impress family and friends?
It quickly became an obsession. And we set our goals even higher. We wanted to produce the best handcrafted gin available.
So we started looking for a suitable place for our distillery. We asked a family friend who owned a 1930s aircraft factory converted into industrial units. Some unused storage space was available for sale, which quickly became Buckinghamshire’s first micro-distillery
OUR GOAL
The idea of combining modern distilling techniques with the craft of producing small quantities of spirits was something that always inspired us enormously. We source organic and local products wherever possible. It was essential to use only the best and freshest botanicals for our classic spirits and to create new flavor combinations.
OUR METHOD
After experimenting with different distillation techniques, we were drawn to the idea of cold distillation. During this process, each plant is soaked individually to extract its essential oils.
Our two rotary evaporators ‘Roberta’ and ‘Aretha’ distill each botanical in glass, with the highest quality 100% organic wheat spirit. The spirit vapor is then condensed at -8c and any botanical distillation is stored to mellow the flavour. Only then is it combined by hand to produce the finished gin.
Finally, each batch is tasted and each bottle signed. Cold distillation is more complex, but the results speak for themselves. You will find the difference quite surprising.

The combination of Darjeeling and lemon verbena creates a bright, spicy experience that feels both uplifting and refreshing. To add depth, we’ve added cubeb pepper for a soft, warming spice, while pink grapefruit brings a vibrant citrus note. We hope this gin brings you joy with every sip. This aromatic spirit is clean, fresh and soft. Your taste buds will decipher zesty citrus, fragrant orange blossom and elderflower, followed by herbaceous and earthy notes of laurel and licorice root.
