Founded in March 2020 by us, Ellis McKeown and Liam Stemson, Fairham Distillery is named after the birth place of our Signature Edition on Fairham Avenue in Penwortham. After converting our unused outhouse into a small distilling room, this is where the recipe of our first release was constructed.
A love of gin, to a passion of creating truly small batch, authentic, natural and flavour FULL Editions. Made the Fairham way and always crafted with taste in mind.
What made you get into gin?
The one question we always get asked. Well, first and foremost, it was because we enjoyed drinking the stuff. Our preference has always been more traditional styles of gin and found it hard finding a middle ground between traditional and flavoured. The more flavoured, the less traditional.
And that’s where we found our gap.
Back in late 2019 we started researching and learning more about the spirit we loved. Lockdown hit in March 2020 which gave us more time at home to focus on our gin passion, turning our then unused outhouse into a small distilling room housing a 3 litre copper pot still for recipe development.
After 12 months of development and botanical testing, we finally cracked it with our first release in April 2021. To make sure what we were producing was of high quality, we reached out to renowned consultant master distiller Gerard Macluskey, who has guided and mentored us along the way.
Using particular methods to make Fairham Gin true to us, each of our core Editions are distilled in our copper pot traditional stills using a one-shot method. This means that the liquid you find in each bottle is coming directly from the still, boasting an unrivalled all natural and authentic taste.

Fill glass with a handful of ice, add a 50ml measure of Signature Edition and then mix with Fever-Tree Mediterranean Tonic Water (we like to use around 150ml). Enjoy your first serve without any garnish so you can experience the full flavour, or serve with a fresh citrus slice. Watch as the gin turns cloudy in your glass, adding character to your flavour filled G&T. (Top tip: Signature Edition also pairs well with Sicilian Lemonade!)

Stay classy with this exquisite serve. Shake all the ingredients with ice, strain into a flute glass, top with prosecco and garnish with a lemon ribbon. 25ml Signature Edition, 25ml Limoncello, 12.5ml Lemon Juice & prosecco.

This isn’t your normal ‘original’ gin. With the aim to initially showcase what Fairham Gin is about, the taste, smell and profile gives Signature Edition it’s uniqueness and charm.

How do we distill signature?
We 100% vapour infuse our 13 Signature botanicals, meaning that none of them touch the neutral grain spirit in the pot belly.
This method proved to be best in extracting the fresh, authentic, flavours and smells from the delicate exotic fruits, which are picked up by the vapour as the still is heated up.
Vapour travels down the swan neck and into the condenser unit, turning back into liquid and voila, we have some tasty gin!
And that’s it, no flavourings or sugars added afterwards titling it a one-shot distilling method. All we do after this is water down to 45% ABV bottle strength and then it’s yours to enjoy.

Perfectly Signature. Serve a 50ml measure of Signature Edition over ice, pair with Fever-Tree Mediterranean Tonic – we like to use around 150ml. For garnish use freshly sliced kumquat, or go for a fresh citrus slice.

A truly handcrafted Dry Lancashire Gin that is copper distilled with only six botanicals, including juniper, fresh apples, sweet grape and aromatic coriander leaf. Light, refreshing and ever-so moreish.
TASTE: On the initial nose you will get aromas of fresh coriander followed by juniper and gentle apple. The smooth and full-bodied profile develops into tart juniper that blends harmoniously with juicy grape and fruity notes, with lingering crisp apple. Perfect for garden sipping.

Fill a glass with a handful of ice, add a 50ml measure of Eden Edition and then mix with Fever-Tree Indian Tonic Water (we like to use around 150ml). Enjoy your first serve without any garnish so you can experience the full-bodied flavour, or serve with a fresh slice of green apple. The natural oils from the fruits may appear as a slight haze in your glass, this is because we don’t chill filter our gins so that the full authentic flavour is kept in for you to enjoy.
COCKTAIL SERVE
The Cilantro Mule
Muddle fresh ginger and coriander with sugar syrup and lime juice. Add ice, Eden Edition and shake. Strain in a tumbler over ice and top with ginger ale. Two fresh ginger slices, Coriander Sprig, 50ml Eden Edition, 12.5ml Lime juice, 1 tsp sugar syrup or gum, Fever-Tree Ginger Ale, Apple slice and coriander leaf garnish.

What’s Included?
With only 15 places available on each tasting event, Ellis & Liam will guide you through the taste, smell and profile of each Fairham Gin Edition. Learn how we got to where we are today and why our juniper-forward gins are full of natural, authentic, flavour. Served individually on boards, you’ll enjoy three G&Ts from the core range with tasting notes taken along the way. The gin tasting lasts for approx 1.5hrs.
Below you can pre-order a grazing board to stay and enjoy at the bar after the session, prepared by local business 42a_graze. Each board comes with a selection of meat, crackers, cheeses and condiments, with vegetarian & vegan options available. A small Nibble Board and a larger Sharing Board is available to select. All allergens may be present.

Pink polka perfection – a new limited release

Fairham Authentic Natural Gin
Lancashire-based businesses Fairham Distillery and Secret Industries team up to create a special pink gin release.
Fairham Distillery’s Ellis McKeown, 28, and Liam Stemson, 27, the owners and distillers who have created the multi-award-winning Fairham Gin, have launched Limited Edition Vol.2, their expression of a pink gin that is a first for the distillery.
Liam says, “We’ve gone slightly off-brand with this special limited release and created a coloured gin that has an all-natural pink hue to it as opposed to our usual clear gin.”
The Fairham pair have taken a traditionally distilled classic juniper-forward gin and combined it with fresh British raspberry and strawberry, along with the addition of aromatic lychee.
“The natural pink hue comes from the process of resting a traditionally distilled gin with strawberry, raspberry and lychee. This rests in a barrel before being filtered and then bottled in its own specially designed artwork,” Liam continues.
For those not familiar with the Limited Edition range by Fairham Gin, they use these releases to showcase the work of local artists on the front cover of the bottle, and for Limited Edition Vol.2 the distillery have teamed up with Tim Bridges, a Preston-based graphic designer.
Tim says, “I was really excited when asked to do this project. To work with someone local that produces a national award-winning product is amazing. It’s also flattering and a little terrifying all rolled into one!”
Tim Bridges, who is also known by his business name; Secret Industries, founded his graphic design business in 2010 initially starting out as hobby. Since 2018, Tim has focused his efforts on graphic design and has turned his creative output into a full-time role working on logos, brand identity and illustrative work for small Northern businesses.
“I love the bold, simple and clean logos of Cruz Novillo, but the grit and texture of designers like Chris Ashworth. I love pop art, punk fanzines, comic books and traditional American tattoo art. You blend all those together and you get Secret Industries: simple illustrations, bold outlines, strong typography, bright colours, repeat patterns and dirty textures.”Tim Bridges, Secret Industries
Pink is the obvious feature of this new gin release, with the two business working together to create a piece of artwork that would represent not only the botanicals used but also the colour of the liquid.
Tim explains, “We really wanted to highlight the fact that this was going to be Fairhams first coloured gin, so most of my design decisions were made with that in mind. I actually love working with a colour like pink, there’s an opportunity to do something really bold and loud. What I found really rewarding was that Ellis and Liam were insistent that it should feel like a piece of Secret Industries artwork: their bottle just happened to be the canvas.”
“I pitched four initial ideas, and they selected this one because they felt it was the best reflection of my work. It’s still really refreshing to work with people that are happy to put their trust and confidence in your personal style and approach.”
Limited Edition Vol.2 is the second limited release by Fairham Distillery, following on from their collaboration on Limited Edition Vol.1 with Penwortham-based illustrator Georgia-Maia in 2022.
Ellis says, “Our limited range is just as exciting for us as it is for our customers. As well as pushing ourselves out of the comfort zone of our core range, we love the process of looking for and working with different artists. It’s an extremely creative way to mix two types of businesses together and it was a joy to see Tim perfectly create a design dedicated to Limited Edition Vol.2.”
A Penwortham distilled gin with a Preston-based design is the perfect way to celebrate the creativity and diversity coming out of Lancashire.
Tim says, “I believe The North, and Lancashire in particular, can be as creatively and culturally significant as places like London and Bristol. I believe that starts with forming a solid creative community. Any small independent business can be considered creative, and we should all be looking for opportunities to collaborate. When we do work together, it’s helps forge that sense of community, and that benefits everyone.”
The pink polka design and gin won’t be around for long, with the release only being made available for a limited time only.
