We’re delighted to be bringing them back to the portfolio, with a new look and two new expressions – a Sauternes Cask Aged Gin and a Spanish and French Red Wine Cask Aged Gin.
The Red Wine Cask Aged Gin has been matured in a combination of French Bordeaux and Spanish Rioja casks, giving our spirit a rounded palate with juicy berry notes and warming undertone of oak spice and stone fruits. It’s excellent in a simple tonic serve – but this gin truly comes to life when mixed in equal parts with vermouth and Campari; built for a Negroni, you can really taste the difference.

Both have the same award-winning London Dry base spirit, but maturation has taken them on a unique journey as the cask influence and the wine character take hold. The result is two delicious and distinctive gins that are a must try for anyone that’s looking to level up their G&T, add an extra layer to their Negroni or jazz up a Hugo Spritz.
The Sauternes Cask Aged Gin adds a honeyed, yellow fruit aspect to the gin. The dry, peppery juniper is tempered by syrupy peaches. Again, this is one to try with tonic at first to pick out those unique dessert wine properties. Thereafter, it can stand up in a white negroni, a Hugo Spritz, even as a decadent Tom Collins.

This botanically rich spirit incorporates ingredients that can be spotted around local grassland and coastal golf courses in Scotland. Inspired by the ocean view of St Andrews Links, we created a seaweed base with Scottish heather adding a floral undertone.

Eden Mill Golf Gin also incorporates other ingredients inspired by the flavours that can be found around coastal golf courses in Scotland, such as Lavender and Pine.

Nose: Hints of Juniper in a forest of lavender and spruce trees. There is a slight tang of the sea that underlies it.
Taste: The juniper dominates as it should but there is a sweetness from the gorse to it that makes sure it isn’t overpowering. The heather and lavender add a floral note while the spruce and coriander provide a distinct peppery finish.

OUR SITE IS BUSY…
Our timelapse cameras take a photo every 15 minutes. What you can see below is our future distillery visitor centre. This will be a bright, open space with mezzanine flooring allowing guests to get a feel for the true height of the building. The big windows at the far side offer beautiful and uninterrupted views over the Eden Estuary towards St Andrews.
If you have been past the site recently, you’ll see it is a hive of activity and our branding now sits proudly on the external walls of the building. We are on course to become operational early in 2025 and we plan to open our visitor centre doors a couple of months later – not long now!
WHAT’S IN A NAME?
A lot, if you ask us! At the beginning of the summer, our branding was installed on the external walls of our distillery. We had all been looking forward to this moment for a long time and it now feels like the building is officially “ours”.
It is now easily recognisable as the Eden Mill Distillery to anyone who passes it!
OUR PRIME LOCATION ON THE EDEN ESTUARY
This photo gives you an idea of the views from our distillery windows. The top floor of the visitor centre will be home to a cocktail bar where guests will be able to sit back, relax and take in the beautiful landscape, which is always striking regardless of whether the weather is calm and still or brooding and stormy.
Showcasing the best of gin and whisky
We will offer our guests gin and whisky tours, each of which will take a different route around the distillery.
Both will tell you the story of Eden Mill and our exciting journey so far and both will also finish with a tasting. The cocktail bar will be available to book as a bolt-on to your tour, in case you want your visit to last a little bit longer!
A PLACE TO ENJOY
We want our guests to be able to come and visit us, regardless of whether or not they are doing a tour. Our distillery will have a café on the bottom floor,
perfect for enjoying a coffee and a homebake while catching up with friends.
There will be a retail space where we’ll sell not only our gins and whiskies, but also local produce. On the top floor, our bar will offer a range of cocktails for visitors to enjoy while looking out at the stunning view of the
estuary waters.

We know we are so lucky to have our home on the beautiful Fife coast and we want our distillery to have the most positive impact possible on its surroundings and on the community.
All our electricity will be 100% renewable, coming from either the solar farm belonging to the University of St Andrews or other renewable energy sources. Additionally, the CO₂ produced during the fermentation process will be captured for future use and we are getting ready to announce a very exciting new partnership with a fellow Scottish company…

Compact and cosy, the walls of The Bothy showcase information about Eden Mill and about our new distillery and visitor centre.
While we are happy to welcome in visitors, it’s better to schedule some time with our Whisky Brand Ambassador, Euan, so he can ensure he’s there and so that your visit doesn’t clash with other scheduled appointments.

ACCESSIBILITY:
This event is suitable for over 18s only. The venue uses the challenge 25 policy, so be prepared to show ID.
As you will be partaking in a mixology session containing alcohol it is not suitable if you are driving to the experinece. We suggest using public transport wihtin the city if you are attending.
Due to the age of the building in whih we are located we are unable to provide wheelchair access. There are 16 steps leading into the experience.
Once inside the experience is seated for the duration of the experience and there are no steps. Please advise us on the booking form if there are any accessibility requirements.
Due to limited space, please arrive no earlier than 15 minutes before your visit start time otherwise you may be asked to wait outside and we cannot guarantee the weather in Scotland!
