Dingwall is a town in the east of the Scottish Highland council area, in the Scottish Highlands. The place has a population of 5026.

Vroeger was Dingwall een havenstadje aan de oostkust, maar vandaag de dag ligt het meer landinwaarts. Om Dingwall toch met de zee te kunnen verbinden heeft men in 1816 een kanaal aangelegd van Dingwall naar Cromarty Firth. Het kanaal, ontworpen door Thomas Telford, is met zijn lengte van 1,6 kilometer het kleinste en meest noordelijk gelegen kanaal van het Verenigd Koninkrijk. Sinds de komst van het spoor in 1865 is het gebruik van het kanaal sterk gedaald en in 1890 is het kanaal gesloten. Station Dingwall is aangesloten op de Far North Line en ook op de Kyle of Lochalsh Line.

Koning Alexander II maakte in 1266 van Dingwall een koninklijke burgh en deze oorkonde werd door Jacobus IV vernieuwd. Dingwall was vroeger de hoofdstad van de County Ross and Cromarty.

Pour a generous amount of gin over just enough ice to chill, and add curl of orange peel and a sprig of bruised coriander. The orange peel enhances the gin’s sweet and fresh citrus notes, and complements its beautifully spiced undertones.

The coriander elevates the herbal and floral notes of the gin; simply use it to balance the citrus flavour to your own individual taste. Add a good-quality tonic water if desired.

Aged in a single 1st Fill Oloroso Sherry Hogshead, the ‘European oak’ releases rich fruit flavours during maturation to complement the crisp aromas and full flavours created by the nine premium botanicals at the heart of GlenWyvis GoodWill Gin.

Tasting Notes

Nose

Reminiscence of forest walks as the scent – guided by the Juniper – leads you through an alpine forest. Fresh blooms can be sensed as the floral bouquet prolongs the forest feel. The aromas of Mediterranean orange groves and freshly prepared lemon zest are never far away.

Mouth

Clean, crisp citrus fruits is at first refreshing, and then gives way to a deeper complexity. It is now that the rich spice of orris root, coriander and cinnamon come through in the full, whilst smooth creamy almond helps to create a fine balanced taste.

Finish

Lastly, the tongue enjoys the satisfying citrus and spice sizzle. While, at the back of the palate, there is a creamy ‘melt-in-your-mouth’ sensation to enjoy. Throughout, this complex combination remains smooth, clean, and fresh.


Our Story

Nestled beneath the sprawling mass of Ben Wyvis mountain in the Scottish Highlands, GlenWyvis Distillery was established in 2015. The idea was to unite the community of Dingwall through the creation of a distillery owned by local people.

Dingwall’s last whisky distillery closed in 1926. After a 90 year absence, GlenWyvis revived the town’s lost distilling tradition, and made its own history in 2016 by running a record-breaking open share offer. More than 3,000 like-minded people invested in GlenWyvis to create the first ever 100% community-owned distillery. It was an incredible response to an extraordinary idea.

We are inspired by our beautiful landscape, and motivated to preserve it. GlenWyvis is a pioneer of sustainable distilling; wind, hydro, solar and biomass energy power our operations.

A COMMUNITY-owned distillery which aims to bring both gin and whisky production to the Highland town of Dingwall has edged a step closer after ordering gin distillation equipment.

The GlenWyvis Distillery, which received initial backing from some 2600 members who invested £2.6 million in the original share offer last year and a further 3000 members through the second open share offer, is planning its first run of new-make spirit later this year, with gin distillation to follow early next year.

David O’Connor, chairman of the distillery board, said: “We are extremely grateful to our partners at the Shetland Distillery for supporting us through the start-up phase and helping to establish our gin brand in the market. However, moving gin production to Dingwall is something that our members requested when we sought their views earlier this year. In fact, it is one of the drivers behind our second open share offer.”
