Crossbill Distilling is an established distiller with experience dating back to 2006. Gin production began in 2012 in Aviemore in the Scottish Highlands. In 2017 we relocated to the legendary Barras in Glasgow’s East End, where we distil our range of award-winning, Handcrafted Scottish Gins.

Our Gins are a celebration of Scottish nature, made with wild, fresh botanicals, harvested by hand then slowly macerated in Glasgow before being distilled. Each bottle is a testament to our passion for creating an exceptional gin and showcasing the beauty of Scotland’s natural resources.

A rare, special edition dry gin. Using wild Highland juniper hand-picked from a single specimen bush that is c. 200 years old. Slowly macerated with fresh rosehips then distilled in soft Scottish water. Resinous, silky pine and sweet, ripe dark berry notes. Bottled at still strength to deliver an intense concentrated dry gin.

A rare, special edition dry gin. Produced using the juniper of a single specimen bush, aged around 200 years old, which grows wild in the remote rugged moorland of the Scottish Highlands.

Once a year, juniper from this ancient bush is gathered by hand along with wild rosehip that grows nearby, taken to Glasgow where it is then slowly macerated and distilled in a copper pot Bain Marie still.

The result is an intense concentrated dry gin that captures an unequalled level of freshness. A tribute to a rare and magnificent native Highland conifer.

An ultra-premium gin, distilled from a single specimen juniper bush, bottled at still strength, therefore, holding more of the essential oils from the botanicals, changing the dynamic of the gin. We suggest you serve over ice with a good quality tonic and a flamed orange twist.

Produced using only fruit from this ancient Juniper bush and the wild Rosehip that grows around it. Bottled at 59.8% Still Strength, the Crossbill 200 Special Edition bursts with fresh pine and juniper taste. It is the perfect expression of a rare and magnificent highland plant captured and condensed.

We set out to create the first gin to be made with 100% Scottish Botanicals. Following a year of development, Crossbill was launched in 2013. Initially distilled in Aviemore, using hand-picked Juniper and Rosehip from the ancient Highland pine forests, before relocating to the legendary Barras in Glasgow’s East End, where we now macerate the same two fresh, hand-picked botanicals before distilling in our Copper Pot Bain Marie.

A refined yet bold gin, bursting with the freshness of the Highlands. We suggest you serve over ice, with a naturally light tonic. Squeeze a twist of orange zest on the surface to release a burst of the natural oils, then garnish with the twisted peel.

We produce in small batches, using only two botanicals, Juniper and Rosehip, fresh not dried, and hand-picked from the Scottish Highlands. Each batch responds to the harvest and temperature of our surroundings, giving our gin a refined yet bold taste with unequalled freshness.

Back in 2012, we set out to create the first gin to be made with 100% Scottish Botanicals. Following a year of development, Crossbill gin was first launched in 2013. Initially distilled in Aviemore, before relocating to the legendary Barras in Glasgow’s East End.

We are a small team with a hands-on approach to creating gins that allows us to refine the taste and flavours that you enjoy so much. We do not distil for other companies, focusing all of our attention and gin-making skills on Crossbill.

The Barras market has a long tradition in the East End of Glasgow. Since the 1920’s, large street-level halls open every weekend offering everything from fresh fruit and veg, boots and kilts to antiques and collectables.

After several decades of slow decline, the Barras Public Realm project was introduced to create a unique and vibrant destination and to breathe new life into the area. Thanks to this initiative, new shops, bars and studios are now starting to open around the Barrowland Ballroom and BAaD (Barras Art and Design), providing benefits to the local community and encouraging further investment and activity while retaining its character and tradition.

Our freshly harvested botanicals are brought from the Highlands to our distillery in Glasgow where they are rested in base spirit to slowly macerate.

Following maceration, we distil in small batches in our copper Bain-Marie still. Each batch has its own character and taste that varies according to harvest and temperature. Crossbill 200 is a single batch release, whereas Crossbill 100 is a blend of small batches from the same harvest, a true expression of our Scottish summer and nature.

Although we distil in Glasgow, it is important not to forget our roots and source of ingredients. All botanicals are hand-picked by ourselves in the Highlands, using a traditional method that dates back to the creation of gin. We focus on exercising care and consideration to the surrounding plants and wildlife. This sustainable approach ensures regeneration of the Juniper bushes for the following years’ harvests.
