About us
Discover Chew Valley Distillery, an award-winning family-owned gin
distillery nestled in the picturesque village of Bitton, Bristol.

In just over three short years, our passion for crafting exceptional spirits has propelled us to remarkable heights within the industry.
At the heart of our story is the Kelly family: Joe, Amy, and their two lovely children, Freya and Lola.

Joe Kelly, an aircraft engineer by profession, found his true calling in the world of spirits. With unwavering support from his wife, Amy, a midwife and supermum,

Joe devoted every spare moment in 2020 to learning, building, and perfecting the art of distilling. Their hard work and dedication paid off, and Chew Valley Distillery was successfully launched in February 2020.

Our rapid growth and astounding success, fuelled by our award-winning gins, led us to relocate to a new site just a stone’s throw away from Joe’s cherished childhood playground, the Chew Valley – the inspiration behind
our name.

Today, our fully operational distillery, bar, and bottle shop
welcome visitors on Fridays and Saturdays from 12 to 6 PM.

We also offer tours and tastings for a more immersive gin experience.

At Chew Valley Distillery, we pride ourselves on crafting award-winning gins using only the finest ingredients and an unwavering commitment to quality. Our attention to detail and dedication to sustainability are the cornerstones of our exceptional gin range.
The foundation of our gins is a certified organic neutral grain spirit,
produced in the UK using the highest standards and locally grown grains.
We then infuse our spirits with the purest Cheddar spring water, sourced right from our doorstep, ensuring unparalleled freshness and taste.

Our botanicals are carefully selected with sustainability in mind, incorporating as many organic ingredients as possible. This commitment to excellence is reflected in the rich, complex flavours and aromas that define our gins.

In collaboration with Village Design, a local design company, we’ve created striking bottle designs that encapsulate the essence of Chew Valley Lake. Printed by Vale Labels, another local partner, our UK manufactured Brunel Bottles pay homage to Bristol’s rich history and engineering prowess.

We believe that excellence lies in the details. That’s why each of our bottles is meticulously hand-labelled, with batch and bottle numbers handwritten, ensuring the utmost care and personal touch in every aspect of production.

Launch in February 2020

Hand crafted in small batches in the village of Bitton located on the boarders of Bristol and Bath

Joe steeps and then vapour infuses 11 carefully selected botanicals with Cheddar spring water and British Organic grain spirit in 1 of our 4 copper stills.

Bottled at 43% abv this Premium Gin is renowned for it’s smoothness and diversity.

Perfect to serve as a G&T or to take your cocktails to the next level.

Chew Valley Gin Fine flavours and quality

We have teamed up with legendary New Bristol Brewery and put our twist on their iconic Cinder Toffee Stout.

Just like our White & Spiced Rums, This is a from scratch British rum. We have fermented Sugar cane molasses using our blend of yeast strains and pot distilled in our beautiful 150l copper pot still.

Note -THIS IS NOT A LIQUEUR!!!!!

Bottled at 42%abv with a cork displaying the New Bristol Brewery Logo (Etched in house) this bottle of rum is also a work of art.

Expect intense toffee on the nose, sweet burnt sugar on the palate alongside a long rum finish.

This is a gift that just keeps giving.

Best enjoyed Neat over ice, With Cola (if you have a sweet tooth), Lemonade to go long or drizzled over your favourite ice cream.

City Borders Spiced Rum 70cl 42% abv

Chew Valley Gin Fine flavours and quality

100% Produced on the borders of Bristol and Bath – UK

Pure sugar cane molasses is blended with Cheddar spring water and heated to a target temperature. Our choice of natural yeast is added and left to ferment for at least 10 days.

Distillation

Post fermentation, our wash is transferred to our copper pot still (aka Louise) We perform 3 separate distillations, making the necessary cuts to ensure only the highest quality liquid is collected.

Dilution

Post distillation we reduce the abv of our rum using water that has been filtered using a reverse osmosis system.

Spicing

We steep a range of ethically sourced, all natural ingredients in our Pure White Rum for up to 7 days. These Include, fresh stemmed ginger, cassia bark, cloves, peppercorns, grains of paradise, star anise, vanilla pods and fresh orange zest.

Bottling

We lightly filter and bottle manually …one by one, then seal with our in-house etched stopper and apply our biodegradable tamper seal.

Labelling

When labelling is complete every bottle is inspected to ensure it meets our high standards. Each bottle is then signed by the distiller and the batch number is hand written on the label.

To Taste

This is not your typical Spiced Rum. We’ve chosen to use a yeast that helps produce esters that are more commonly found in Caribbean rums. This combined with the use of our copper pot still results in a super complex Rum that is sensationally smooth and leaves a long lasting flavour.
