Gin Distillery in the UK


Modern-day Cambridge can trace its origins to 875AD when the Danes conquered Eastern England. The town continued to grow and develop through the Anglo-Saxon and Norman periods, before receiving its town charter in 1207. This fascinating university city is full of beautiful architecture, offering a window into the past.

Thanks in part to the 800-year-old University of Cambridge, this city is a center for innovation, creativity, history and architecture. The Distillery was founded by Will and Lucy Lowe and was the very first place in the world to offer people the chance to tailor a gin to their own taste. A truly brilliant idea, that caught the wave of gin obsession that started a few years back and seems to still be going strong.

The distillery makes their own wonderful gins  (every one an award winner) and partner with big names creating bespoke gins for the likes of British Airways. Anty gin – a collaboration with the Nordic Food Lab, is the first gin in the world to be made from insects! Every bottle has the essence of approximately 62 red wood ants, along with hand-foraged botanicals. It was named World’s Most Innovative Alcohol in the 2015 World Beverage Innovation Awards. If you’re not up for that one then one of the seasonal gins made from botanicals foraged in and around Cambridge and are truly delicious.

The best flavours come from real ingredients. Thanks to our approach to vacuum distillation, accessing cold temperatures out of the reach of traditional producers, we are able to use fresh botanicals in the way that others cannot.

No two botanicals are identical so we treat each individually. Our unique novo-dimensional distillation matrix pin-points the perfect conditions for each and every precious botanical we source.

Separate distillates are then blended to perfection by an industry-leading palate, William Lowe MW.

He distils each botanical individually to preserve the purity of its essence and only then does he blend these perfectly refined elements into spirits of exquisite quality.

Local, seasonal botanicals were individually distilled and expertly blended into a gin of outstanding quality.

Traditional juniper combines with fresh basil, rosemary, rose petal, angelica seed, blackcurrant leaf and the effervescent citrus finish of lemon verbena. The result is an homage to both our heritage and to the aromatic, sensorial delight of an English meadow at the height of summer.

Under the expert supervision of Cambridge University Botanic Garden’s Curator, rare botanicals were harvested and distilled individually to create a unique gin.

Fresh lemon lavender, ginger rosemary and even crisp apples from Sir Isaac Newton’s tree combine to produce an outstanding gin as floral as it is intense.  


Curator’s Gin is a rarefied expression of the secret treasures of Cambridge University Botanic Garden.

Raspberry-flavoured gin from Cambridgeshire is now being exported to the USA and Australia.

Pinkster Gin has seen its turnover double in the past year to £1,100,000, and is now employing 10 members of staff from its base in Newton. Its ventures overseas have been made possible by a £200,000 working capital facility provided by Lloyds.

Established in 2013, the company produces raspberry-flavoured gin that is sold through suppliers such as Ocado and Oddbins, as well as by independent wine sellers. Pinkster also recycles the berries used to make the gin and sells ‘boozy berries’ in local farm shops and delicatessens across the UK.

With reduced alcohol and lower calories, Pinkster Spritz is the perfect light, refreshing drink for catching up with friends this summer.

Made with tipsy, locally grown raspberries raspberries left over from producing Pinkster gin, it’s both naturally deliciously and sustainably sound.

We recommend serving this scrummy spritz base with soda water, a squeeze of fresh lime and heaps of ice. If you can lay your hands on Fever-Tree’s Mexican Lime Soda, all the better.

There’s two fab flavours: Elderflower and Raspberry, crafted with wild elderflower foraged from East Anglian hedgerows; Hibiscus and Raspberry, infused with exotic hibiscus flowers.

Best of all, a regular 25ml Pinkster Spritz measure has no more than 40 calories, with just 4.8% vol and 0.6 units once mixed with soda.

Or put another way, that’s a third less calories than your average glass of wine.
