Bristol Dry Gin is a micro-distillery situated in the centre of Bristol, in the vaulted basement of an ancient building.

The brand was started in January 2017 by two inquisitive cocktail bartenders who wanted to produce a range of spirits that they would be proud to serve on their bar. Experimentation, superb quality, a great sense of humour, a friendly nature and vibrant artwork have all been at the heart of our operation.

We have strived to make a spirit recipe for every occasion and tried to use as many rare and unusual botanicals as we can get our hands on.

Our current range consists of three separate brands and over 10 expressions, ranging from a 75% gin all the way to a honey rum, and our recipe book holds around 30 unique and innovative concoctions.

Past experiments range from bacon vodka and pizza gin to hibiscus and lime leaf limoncello. Aside from the strange experiments, we produce exquisite citrus-lead gins, fruit gins and spiced gins. We even have a chai-spiced gin in the range.

We have won multiple awards for many of our spirits, ranging from local awards to two highly prized World Gin Awards. We offer weekly gin tasting sessions, hosted by one of our distillers and our distillery is open to the public on a weekly basis.

Pop in for a sample and a chat sometime. We would love to show you around.

We work with some amazing companies including, The Old Market DistilleryThe Rummer, The Beer Emporium, Doyle Collection Hotels, Aimees Winehouse Hilton Hotels, and the best online retails.

In an industry bloated with ‘heritage this’ and ‘tradition, that’, we think there’s room for a brand like us. A brand that sets itself apart in how it thinks, the way it goes about things, the drinks it creates, and how it expresses itself.

And how do we do it? By stealing the vital elements from traditional distilling, binning the rest, then starting afresh. Unfettered by convention, we can go off the beaten track to somewhere no-one’s been before.

It’s an approach that’s served us well so far, and given us the confidence to keep sticking the bird to the status quo.

You want delicious spirits but your margins are tight as you’re facing rising pricing pressure across the board. Buying a big brand from a global producer is the most cost effective thing to do, right? Wrong!

We make delicious gin, vodka and rum in a sustainable way and are on a mission to become the leading distillery brand in the South West. We want to break the grip the big producers have on the UK on trade and bring a more innovative & exciting offer that stacks up commercially for venue operators.

Our larger pack format 10L & 25L refill tanks mean you can have a small batch London Dry Gin, craft distilled vodka and rum (white and spiced) as your house pours at a cheaper price than most boring faceless global brands and be much more sustainable while doing it. We also offer our incredible taste leader ‘The Em’ a ready to drink Exspresso Martini.

Go on – make the switch today – you’ll be in fantastic company. Find below a selection of brilliant operators in Bristol and beyond who have made the sensible decision to pour with Gin 77, Triple B, Hanks and The Em.

About Our Distillery

The idea of Old Market Distillery was born many years ago, but it was only being furloughed during the pandemic that gave the founders the time to make their idea a reality.

Born in January 2021, with installation being done at a safe social distance and in face masks, the distillery represents the next evolution in craft distilling in the city of Bristol.

We could not have done it without the love, help, and support of Bristol Dry Gin who have been the Yoda to our Padawan. We remain eternally grateful for their help, insight and passion for their industry, their city and their fellow human beings.

Old market distillery

Old Market Distillery was set up to produce a distinctive style of gin which has been largely forgotten, and is largely the preserve of cocktail bartenders and gin aficionados. The Old Tom style was the dominant style of gin for decades. The added sweetness making primitive distillates more palatable. As distilling improved, and tastes moved on, the need for sweetening diminished and was largely forgotten, save for a few classic cocktails. Even though gin has exploded in popularity, it is still a divisive spirit, attracting love and hate. Old Tom has always been a bridge in the spirits world; not as dry as London Dry, and not as sweet as Dutch styles.

It was with this in mind that we, set out to recreate a populist juniper spirit and recreate the famous Old Tom Style.

A gin made in honour of a Bristolian legend of old, Thomas Cribb.

Tom Cribb was a bareknuckle fighter, born on the outskirts of Bristol in 1781. From humble beginnings, Tom fought his way to stardom, gaining  support from the masses and friendship of the famous.

In keeping with the 18th and 19th century theme,  this gin is based on a Victorian production style and uses a collection of classic botanicals to add flavour- juniper, wormwood, liquorice, hyssop, bay leaf and birch leaf.

Old Tom Cribb Gin

Our Old Tom Cribb gin is an ‘Old Tom’ style of gin, meaning that it has been slightly sweetened after the distillation process. During the 18th & 19th Century, gin production often included ingredients to sweeten the spirit. The sweetening made the gins more akin to the dutch style, but was also used by some to mask dubious production practices. Regardless of the reason, the Old Tom style of gin was incredibly popular among the drinking classes, but has since fallen out of popularity.

As a sweetener, we settled on a minimal mix of sugars with a high molasses content- muscovado and demerara, which adds a slight bitterness to the finish.
