Gin Distillery in the UK


Brighton, urban area (from 2011 built-up area), unitary authority of Brighton and Hove, historic county of Sussex, southeastern England. It is a seaside resort on the English Channel, 51 miles (82 km) south of central London. In 2000 the unitary authority of Brighton and Hove was granted city status.

Brighton spreads over the steep chalk slopes of the South Downs to the north. To the east it is fronted by chalk cliffs, and to the west it merges with the residential borough of Hove. Major sea defenses initiated in 1930 line the shore between Black Rock and Saltdean. A marina for boating has been created at Black Rock.

If you happen to visit Brighton Gin on a distilling day you’ll be met by an aromatic curtain of citrus as Paul, our superstar lead distiller, peels dozens of fresh oranges and limes that bestow a lively zest to both our Pavilion and Seaside gins. However, these are just two of the all-natural ingredients that go into our award-winning Brighton Gin – read on to find out the other ingredients and exactly how we create our handmade gin. 

Brighton Gin starts with a base spirit produced from 100% organic wheat which is then flavoured with a mix of botanicals, the primary one being juniper berries which are actually seed cones from a coniferous tree. Juniper is the main gin ingredient for flavour and imparts the characteristic pine note that makes gin taste like nothing else. Then orange and lime peel are added, plus coriander seeds for their subtle lemon and spice, angelica, which imbues earthiness and acts as a flavour fixative by binding volatile aromas to prevent them from evaporating, and finally, milk thistle, foraged from the South Downs, used in natural medicine to protect the liver. Brighton Gin & Navy Gin

Our Story.

Brighton Gin was born of a passion for gin, and a passion for the place where we live and play – we wanted to create a gin that embodies the Spirit of Brighton: unusual, playful and fiercely independent.

It started back in 2012 with months of experimentation with different ingredients, combinations, distilling techniques and approaches, and more than one or two accidents along the way (but we lived to tell the tale!) and lots of trying out recipes on fellow gin-loving friends until we finally hit the perfect blend.

The Brighton Gin School welcomes you to become a master gin-maker! Spend a couple of hours with us to create your own gin! Develop your own recipe from a range of botanicals; then bottle and label your creation to take home to enjoy! Come along by yourself or bring a friend, and discover the processes of gin-distilling whilst enjoying a G&T (or two!) on us.

We have six stills at the Brighton Gin School, and each is capable of distilling 700ml of gin, making this a very personal experience. Book one still for yourself, or share the experience with a friend.

Decant your gin, label and wax your own 700ml bottle of gin to take home afterwards. We will then keep record of your unique recipe so we will be able to recreate your gin whenever you would like another bottle!

All Gin School guests will receive a 10% discount for anything purchased during their distillery visit!

Our Gin School events take place on the ground floor in our distillery which is fully accessible. Regrettably there is no entirely level access to toilets on site – there are toilet facilities on the ground floor which may suit people with limited mobility but not wheelchair users. Madame Jennifer Distillery is a small urban distillery located in Hove, East Sussex, immediately west of its larger neighbour Brighton. The distillery is located in Poets’ Corner, a quaint part of town where the streets are named after famous poets. 

Hove, like gin, has become more refined since the 18th century, when it was described by John Warburton as a “ruinous village”. Laurence Olivier is quoted as the origin of the phrase “Hove, actually”, a humorous reply by residents when asked if they live in Brighton.

Hidden between the rows of Victorian terraced houses ubiquitous with Poets’ Corner, our beautiful little distillery is built in a small commercial building that was previously a coffin manufacturer. We have the pleasure of sharing the space with a range of exciting artistic and independent businesses.

Welcome to Madame Jennifer Distillery. We are Inger & Ian who originally trained as a biologist and chemist and are putting our science skills to new uses.

Inspired by a book on craft distilling and a 2016 trip to the oldest distillery in Amsterdam, we wondered if it was possible to create a small distillery of our own.

In 2018, after lots of research, we opened Madame Jennifer Distillery in Poets Corner, Hove.

Bitter-sweet herbal liqueur

Amaro is a family of herbal apéritif liqueurs that originate from Italy, amaro is Italian for bitter. These liqueurs are used as an important part of popular cocktails.

Madame Jennifer’s Sussex Amaro is made at our distillery in Hove from a distinct blend of 14 botanicals, pure cane sugar and English wheat spirit.

Serve with lemonade or soda for a refreshing long drink. Or use alongside our gin and a quality vermouth for a classic Negroni.

Crafted from a specially distilled dry gin, with strong notes of orange, cinnamon and allspice. 

​Aged by resting on charred vintage French and American oak giving colour, a rich smokey flavour and a mellow vanilla sweetness.

This Oak Aged Gin is produced in very small batches and is rested for 7 months. Availability is limited and each bottle is numbered. 

Best gently sipped neat or over ice. It is a fantastic replacement for whiskey in cocktails. Try it in an Old Fashioned!

Madame Jennifer Bubble-Plate Vodka has a smooth creamy character and a hint of caramel.

Made with 100% English wheat spirit, nothing else added.

During distillation, our English wheat spirit evaporates and passes through each of the six copper bubble-plates in turn. Each time the gas passes through a bubble-plate, it condenses back to a liquid and drips back down the still column. Only the cleanest of spirits make it to the top of the sixth bubble-plate. This is collected to make our exceptionally smooth vodka.

Pair with Madame Jennifer Cold-Brew Coffee Liqueur for an amazing Espresso Martini!

Gin of Paradise

Sussex Dry Gin    45%abv

Gin of Paradise celebrates “Grains of Paradise”. A distinct spice from the West African coast. Named after their mythical origins in the Garden of Eden, the citrusy-peppery spice enhances all the botanical flavours and adds a tingly warmth. Distilled with Sweet Almonds for body and sweetness, this rich, opulent gin has a big flavour and is slightly stronger at 45% abv.

Botanicals:

Juniper berries, Coriander seeds, Grains of Paradise, Sweet Almonds, Lemon peel and Orris root.

Perfect Serve:

Perfectly matched with a premium or aromatic tonic and a slice of lemon.

Sussex Dry Gin    42%abv

A bright lively citrus gin. Grapefruit peel is vapour distilled to capture the fresh flavour. Delicate floral essences from Chamomile and Gorse flowers combine with Juniper berries and Coriander seeds for a smooth clean finish. Cinnamon adds a little spice!

Botanicals:

Juniper berries, Coriander seeds, Orris root, Gorse flower, Chamomile, Grapefruit zest, Cinnamon and Sweet Orange peel.

Perfect Serve:

Perfect for a refreshing G&T, the grapefruit citrus zestiness of The Biologist shines through even the strongest flavour tonic. We suggest a Light Indian or Mediterranean tonic water with a garnish of pink grapefruit or orange.

A smooth, balanced, complex gin. Earthy layers and citrus top notes are complemented by a liquorice sweetness. The botanicals are gently vapour distilled in a series of batches for a complex warm flavour. Chamomile and Gorse give flavour depth with Sweet Orange and Lemon zest top notes. Natural Liquorice Root gives balance without being too strong. 

Botanicals:

Juniper berries, Coriander seeds, Orris root, Angelica root, Gorse flower, Chamomile, Liquorice root, Lemon and Sweet Orange peel.

Perfect Serve:

Ideal for sipping, a G&T, and makes an excellent Martini. 

Serve with Indian, Earl Grey or Aromatic tonic water, and garnish with blood orange and lemon.

With a history dating as far back as the Iron Age,
the Devils Dyke, a 100m deep valley is an area of outstanding beauty in West Sussex.

Legend has it that the Devil himself crafted the Dyke with no more than a pickaxe! Fast forward to the 19th century, Devil’s Dyke became a play area and fairground destination to the Victorians in their hordes.

It is from this era that we have drawn inspiration for the botanicals and perfected our own craft to present you with this beautiful artisan gin. Distilled with classic dry and specially foraged botanicals found on the Devil’s Dyke and around West Sussex, including victoria plums, milk thistle and black elderberry.

Cockatils are seasonal can can range from a “Devil’s 75” to a “Shimmering Pride” to get you settled in.

Learn about the history of gin, the craft of how we make ours, and get to know your way around our still, Lilibet.

You’ll have the opportunity to sample our range of gins and liqueurs with carefully selected mixer pairings. Receive tutored tasting of them to understand how they are made and how best to drink them.

We’ll be putting on a few nibbles along the way to cleanse your pallet. Soft drinks are always available.

Non-drinkers/drivers can choose to take home a pair of miniature bottles to enjoy later.

Visits last approximately 1.5 hours.

You may note, we are offering a ‘visit’ rather than a tour; our distillery is perfectly compact and attached to our residential property. With this in mind we can only welcome a maximum for 4 guests at a time.
