Birch Gin is a contemporary, forward looking gin with complex flavours, superb mouthfeel and a delicious aftertaste. It is designed to be drunk neat, on ice, with water, tonic, ginger ale, grapefruit juice, hot apple juice, simply anyway you like it! It’s a gin without borders or rules. All the rules, time and effort went into the making of the gin, so the drinking should be hassle free.

Justin Birch - creator of Birch Gin

I’m Justin Birch of Wadhurst, East Sussex and I’ve spent a highly enjoyable decade obsessively trying to create the perfect gin. It was worth the wait. 

Birch Gin is made using my recipe. This contemporary, forward looking gin with bold flavours, superb mouthfeel and a delicious aftertaste is designed to be drunk neat, on ice, with water, with tonic, simply anyway you like it! It’s a gin without borders or rules. All the rules, time and effort went into the making of the gin, so the drinking should be hassle free.

The Story of Birch Gin

In 2010 I travelled from my then home in Singapore where my choice of Gin was two mass manufactured gins and landed straight into the UK craft gin explosion. To say this was inspiration, is an understatement…

Over the next ten years I did a lot of research, read a lot of recipes (starting from 1495), and began making my own gin. I bored my wife Dawn by trying almost every botanical and herb, looking for that perfect blend. A big fan of fusion cooking, I wanted a refreshing journey through British herbs, Mediterranean citrus and spice from the Far East. My goal was to make a gin that appealed to me, but also to Dawn, who didn’t like the bitterness of London Dry gins.

Never one to cut corners, I tried every gin-making method before settling firmly on the one-shot method, distilling the exact number of botanicals in one go and never adding concentrate or compounding afterwards. Only 2-3% of the world’s gin is made using this truly special method. Uniquely, one of the ingredients in Birch Gin is birch syrup, rare and expensive with a dark, caramel yet spicy flavour. Sap is tapped from Birch trees in March and is prized for its health benefits. 100 litres of evaporated sap creates 1 litre of birch syrup.

We moved back to the UK in 2014 and by 2020, some ten years after starting, I finally achieved both the flavours and taste journey I was seeking. Soon all of our friends were asking for a bottle or two, or more… This huge demand was difficult to keep up with. Sourcing a suitable still led to some fascinating conversations with micro distillers. One of those conversations was with Andrew Parsons, winner of The World’s Best Contemporary Gin at the World Gin Awards. A bond was formed and some outstanding gin was made in a traditional alembic copper still. Dawn was also rather pleased as it meant I wouldn’t be blowing our house up.

This luxury handcrafted gin is produced in micro batches (around 200 bottles per batch) using the one-shot method, distilling the exact amount of botanicals in one go and never adding concentrate or compounding afterwards. Only 2 or 3% of the World’s gin is made using this method. 

​Birch Gin contains Birch Syrup, Juniper, Coriander, Fennel, Rosemary, Orris Root, Lemongrass, Orange, Lime, Grapefruit, Cardamom, Ginger.

Our bottles are 50 CL and the ABV is 42%.

What the judges at Great Taste Awards 2023 say “Crystal clear and bright in appearance with an inviting nose of complex botanicals. Juniper forward, with notes of sweet citrus, cassia bark, rosemary, orris root mustiness and lifted florality. The flavour is very perfumey and musty with a floral explosion mid-palate. There is a hint of galangalal and, overall, the gin is bold and flavoursome with a complexity of botanicals in harmony. It certainly stands up to the tonic, revealing slightly sharp characteristics and finishes with peppery heat intensity. 

A big citrus hit on the nose, with an accomplished juniper character. A very classic London Dry with generous juniper. a very long and spicy finish with good levels of complexity and evolution to citrus peel.”

This is the Navy Strength (57% ABV) version of the award winning Birch Gin in our signature no-nonsense 50 CL bottle. It won silver medals at the Gin Masters 2021 and London Spirits Competition 2022 and has just won 2 stars (Outstanding Category) at the Great Taste Awards 2023.  

The increased alcohol content creates a bolder gin, bringing out hidden flavours including fennel notes, increased orange, some mellow woodiness yet with the same Asian spices and beautiful hint of sweetness at the finish.

Here’s what the judges at the Great Taste Awards had to say: 

“An unashamedly intense and bold gin with intense orange and fennel flavours. Strong and punchy, concentrated and juniper forward, the ABV feels well integrated. A clever, character filled gin.

The sweetness on the palate is immediate and yes, suggestive of orange or a sweeter-than-lemon citrus, with lightly aniseed notes to follow. Certainly hot at Navy Strength, but still approachable. On the rocks, there’s brightness and a softened spirit. Louching with tonic, while the sweetness of our full-sugar tonic rather elevates the all-over sweetness, there remains a concomitant richness of flavour and aromatic impact. The mouthfeel is liquorous, full and satisfying and the finish delivers fennel notes a-plenty. A very desirable Navy Strength London Dry with a twist.”

Birch Gin Delightful Award winning Spirit

Birch Gin arrived at The Gin Den this week in amongst the rain storms and right at the point the sun shone, so it was straight outside for a quick shot of this stunning branding.


This is a new gin found by chance on Instagram Squares, (and shows one of the many positive sides of social media in providing exposure to brands, that results in a purchase and further support).

I would encourage you to read the full journey that the creation of this gin has taken at @birchgin, it’s fascinating and in summary is as result of the passion and dedication of the creator Justin Birch, taking ten years to perfect a gin that is truly something exceptional.

It’s distilled using the one-shot method, an approach taken by only around 3% of the World’s gins, in essence with the exact method of botanicals distilled in one ‘shot’

Its botanicals include Birch Syrup, Juniper, Coriander, Rosemary, Orris Root, Lemongrass, Orange, Lime, Grapefruit, Cardamom and Ginger. Birch syrup is a costly and rare ingredient with a dark, caramel yet spicy flavour. The sap can only be tapped in March each year with 100 litres needed to create 1 litre of birch syrup.

On the nose it feels like you are taking a journey around the world, with clean subtle hints of spice, citrus and herbs.

On the palate, tasted neat that journey continues with the warming spices, followed by the sweetness of the orange, lime and grapefruit and then ginger coming through, with some woody tones and then finally the caramel from the birch sap.

It’s rare that I come across a gin for all palates but this is most definitely one of those!
