Berry Crush
What is Berry Crush?
The recipe for this Berry Crush cocktail calls for seasonal berries. Raspberries, strawberries, blueberries or blackberries will all taste delicious in this cocktail. I happen to have a bucketful of wild blackberries stored in my freezer.
It is a vodka based cocktail but you can use gin if it’s your preference. I also used creme de cassis, which is a blackcurrant liqueur and it gives this drink and deep and delicious taste. You can also use a raspberry flavoured liqueur like Chambord.
Ingredients
90ml/3 oz Gin
30ml/1 oz Crème de Cassis or Chambord
juice of 1 orange wedge
20 blackberries
2 tbsp pomegranate seeds
soda water
ice
Instructions
Blend blackberries in a blender and strain in a cocktails shaker.
Add Gin, Creme de Cassis, freshly squeezed orange juice and ice.
Shake until the cocktail shaker is too cold to hold.
Strain in two glasses filled with ice and top with soda water and pomegranate seeds.

What is a Gin Fizz?
The Gin Fizz is a refreshing cocktail made with Gin (alcohol distilled from juniper berries), bright lemon, bubbly soda water, a little sweetener and — believe it or not — egg whites!
Given this unusual ingredient, it may just be the coolest cocktail ever — perfect for any party, celebration or to cool down on a hot summer day.
It’s also quite easy to make. In a cocktail shaker vigorously shake your gin, lemon juice, simple syrup and egg whites. Pour into your preferred type of glass and top with soda water. You can add ice cubes if you wish and definitely garnish with a lemon slice.
History Behind the Gin Fizz:
The first recorded history of the word “fizz” showed in the appendix of Jerry Thomas’s “Bartenders Guide” in the late 1800s, according to Wikipedia. However, fizz drinks didn’t gain popularity in America until the early 1900s and through the 1940s.
By the 1950s, though, the Gin Fizz had made quite a name for itself as its popularity grew. Soon bartenders everywhere were shaking up this effervescent concoction that we know and love today.
Gin itself has a very long history — which is no surprise since its origins date back to the early 11th century. It was made by monks in Europe for medicinal purposes. The star ingredient in gin is the juniper berry which had been used for its medicinal properties. In fact, juniper berries were used to treat the common cold, as well as muscle aches and pains. So, it makes sense that doctors of the time prescribed gin as tonic to treat their patients.
As a libation, it was popularized in England during the late 1600s and the rest, you can say, is history.
Health Benefits
Did you ever think that you could brag about the health benefits of a cocktail? Well, this may be the very cocktail that allows you to do so.
Each egg white contains high-quality protein. Egg whites are also high in selenium — a whopping 90% of your daily recommended amount, in fact. Plus, egg whites have plenty of vitamins and minerals, including vitamin B, vitamin D and folate.
So why put egg whites in a cocktail? Egg whites added to any cocktail will add thickness. The egg whites also help balance the sourness in a cocktail and (added bonus!) they give drinks a nice foamy top.
Lemon juice is most known for being high in vitamin C. But did you know that it’s used for digestion, clearer skin and helps maintain healthy blood sugar?
We’re not suggesting that a gin fizz is a meal in a glass by any means. But if you’re going to drink one, we’re happy that it has health benefits in addition to tasting so great.
Fizz Cocktail Variations
Just like with any cocktail there are numerous variations on the Gin Fizz. Citrus is one of the easiest ways to adjust the flavor. We used the classic lemon, but you can use lime, grapefruit, Meyer lemon, tangerine, oranges, etc.
Did you know that you can also get flavored gin?
Just like vodka, the world of gin is opening up to complementary flavors to the juniper berry. Flavored gins can put a new twist on the classic gin fizz right out of the bottle.
Same is true for soda water. Soda water is no longer just soda water. Today you can buy soda water in any flavor you can imagine — even some flavors you may not have even heard of yet.
If you’re looking for a truly unique variation, try using our pasture raised duck egg whites instead of the whites from our chicken eggs. Both create an equally wonderful froth, but if you do choose to use duck eggs, the additional protein in duck egg whites will produce a firmer froth, and some mixologists pick duck eggs for this drink for just that reason.
Tips for Garnishing a Gin Fizz
We think that the garnish for this drink doesn’t get nearly enough attention. After all, it’s what makes your gin fizz look pretty — and when a cocktail looks pretty, it tastes even better. Of course, that does depend on the taste buds of the drinker, but how something looks can play a big part in our perception of its taste.
We chose to use a lemon slice and a candied lemon peel, but you can do the same thing with a lime or orange slice as well.
To make your gin fizz cocktail extra special, we recommend using the lemon slice inside the side of the glass. Simply use the back of a spoon to gently press the slice against the side of the glass until it stays in place. Then gently pour the cocktail into the glass.
For the final touch, carefully place the thin lemon peel on the foam. If it sinks, simply rest one edge of the peel on the rim of the glass for support.

- 50ml Club soda
- Squeeze of lime juice
- Teaspoon of sugar
- Sprig of thai basil or sweet basil to garnish

Grind blackberries and sugar together.
Let sugar dissolve.
Stir ingredients over ice, strain and serve.

Instructions:
Fill a cocktail shaker with gin, elderflower syrup and lime juice.
Add a handful of ice cubes to the shaker and shake vigorously.
Fill a glass with ice cubes.
Pour the blended mixture from the shaker over the ice.
Top the cocktail with tonic water and stir gently.
Garnish with a slice of dried lime, a few mint leaves and, if desired, a slice of cucumber.

A silky smooth combination of Esker Valencian Orange gin, lemon and egg white. Perfect for any occasion.
INGREDIENTS
- 50ml Esker Valencian Orange Gin
- 25m Fresh Lemon Juice
- 10ml Sugar Syrup
- 1 x Whole Egg White
METHOD
Add all ingredients to a cocktail shaker, “dry shake” first with no ice, then add ice and shake hard once again. Double Strain into a chilled martini glass. Zest with lemon peel and garnish with an orange twist.

Ingredients
To make the sugar syrup
- 100g/3½oz caster sugar
- 50ml/2fl oz water
To make the cocktail
- 2 handfuls ice
- 30ml/1fl oz gin
- 15ml/1 tbsp freshly squeezed lemon juice
- champagne, to taste
- 1 lemon twist, to garnish (optional)
Method
- For the sugar syrup, put the caster sugar in a small non-stick saucepan over a medium heat and pour in the water. Stir and bring to the boil. CAUTION: boiling sugar is extremely hot. Handle very carefully. Use a deep pan to avoid bubbling over.
- Once the sugar has dissolved and the liquid is clear, take the pan off the heat and leave to cool.
- Fill a cocktail shaker with ice. Pour 10ml/2 teaspoons of the cooled sugar syrup over the ice along with the gin and lemon juice. Shake vigorously for 8-10 seconds.
- Strain the mixture into a flute using a hawthorne cocktail strainer and a fine mesh strainer. If you don’t have a strainer, any kitchen sieve will work just as well.
- Top up with the champagne and stir gently to mix the drink. Garnish the French 75 with a lemon twist if using.

The Brighton 75
The French 75 is a classic gin cocktail dating back to just after WWI. It originally uses lemon juice and powdered sugar which we have exchanged for lime juice and sugar syrup. There are tons of amazing food & drink producers based in Sussex so this cocktail adaptation is a homage to all those.
Also, did you know that limes are a by-product in the making of our gin because we use the fresh peel (hand-peeled of course!) in our distillation? This is an excellent way of using them up.

How to Make
Add the first 3 ingredients to a Boston shaker (or a clean former mustard/honey/jam jar will do just fine!) and shake with ice. Strain into a chilled flute or Collins glass, top up slowly with a Sussex sparkling wine – stir lightly. Consider pouring half the sparkling wine first to reduce foaming.
PS. For a nice winter edition shake a sprig of rosemary with the other ingredients and garnish the finished drink with a fresh sprig.
For an even more festive version, use sparkling rosé which will create a beautiful peachy hue.
Make your own sugar syrup
Add sugar and hot/boiled water to a jar/bottle – 2:1 ratio (sugar:water). Stir to mix until the sugar has dissolved, let cool down/put in the fridge. Any sugar will do here (although we haven’t tried icing sugar yet).

Winter Olympics Cocktail

Inspired by our love of flavour and combining natural botanical sourced locally and from all over the world we have created a delicious Korean-style cocktail to celebrate the Pyeongchang 2018 Winter Olympics. We’ve chosen to use the popular Korean botanicals include Yuja, a Korean citron fruit, which has a zingy tart flavour – think a citrusy combination of that mandarin orange, lemon, and grapefruit. The fruit is traditionally used to make Yuja Chung – a Korean marmalade and is used on hot tea to sweeten. This makes it the perfect addition to our Cornish Cup Hot Toddy for a Korean twist.
Ingredients
50ml Curio Cornish Cup
200ml Ginger Beer – we recommend Franklin & Sons for a Hot Toddy
1 heaped tsp Yuja Chung (lemon/ orange marmalade as an option if you don’t have a good Asian store nearby)
Method
Gently heat the ginger beer until hot, add the tsp of yuja chung and let this dissolve into the liquid. Pour over the Cornish Cup into a highball glass. Add a wedge of yuja (or orange) to garnish. Enjoy! Find our more about Korean Yuja Tea and Yuja fruit via The Spruce

METHOD
Add all ingredients to a shaker with ice, shake for 10 seconds, then strain into a rocks glass. Alternatively, warm all ingredients in a pan and serve warm.
